Çiğköfte is one of the most popular dihes in Turkey .most of the turkish people consume this loved taste and considering the kebab and other dishes that are made of “meat”, çiğköfte is cheaper . Because its main ingredient is “bulgur” which is a special kind of local rice, spices and some minced meat.
Today, especially in İstanbul, çiğköfte sellers are in a big number, even there are big chains. You can see a çiğkföfte seller in every corner of a street.Although the origin of çiğköfte is ” Şanlıurfa” , many people love to eat it.
Then, how is is prepared?
Ingredients:
3-4 big onions
Lemon juice
1 Ib lean ground beef
2 tomatoes
5-6 gloves garlic
¼ cup canola oil
2 Ib fine bulgur ( cracked wheat)
2-3 tbsp salt
5-6 tbsp isot (crushed hot pepper)
1-2 tbsp cumin
750 gr red hot pepper paste/tomato and pepper paste mix
Preparation:
Process the onions n food processor.Then, take it along with bulgur in a large mixing bowl.Rub the mixture in betweeen your palms for tehn minutes.Add spices.Put some water to keep it wet when the water is disappears.Keep kneading for about 30 minutes to make sure that is soft enough.
Crush garlic and tomato and put and add into bulgur mixture.add lemon and canola oil as well.Shape them in small sizes as you see in the picture=)
Serve with lemon wedges and lettuce leaves.
