“Kokoreç” is one of the most consumed in streets of İstanbul. Although there is a well-konown chain called “ Şampiyon Kokoreç”, kokoreç is prepared and served using different amounts of spices and garnıtures depending on the choice of the consumer of the cooker.
Kokoreç is also probably one of street food which is eaten with “prejudice”. Yes, when we think that it is actually made of “ grilled lamb intestines” , it may sound disgusting and unhygieneic for many people. However, its process of preparation requires a really careful technique:

Then, how kokoreç is prepared?
Ingredients
· 1 pack kokorec (cutted very thinly)
· 4 small cutted tomatoes
· 1/2 bunch parsley
· fresh green pepper small cutted
· currey
· red pepper
· cumin
· thyme
· basil
· mint
Preparation
· After cleaning and washing the intestine (the same way you would with any other intestine-based food), chop the intestine put it on a non stick pot and cook until golden brown ..use your wood spoon with that.., While cooking, cover in a light glaze of honey mixed with ginger and cumen. when done, and mix with tomatoes and whatever spices you like, the spicier the better. Put this mix inside a bit of bread, and eat, preferably with a side of walnut dipping sauce (which should also be spicy).
Of course, you can choose. Ask from “usta” ( who prepares it) to add anything more or less depending on your favorite tastes. Prefarably, it is consumed with “ayran”, which is prepared with “yoghurt” by pouring some water and salt.(It is really a healty drink.)
